3 large potatoes, peeled and cubed
1/2 cup nonfat mayonnaise
1 cup frozen peas and carrots
1/4 cup finely minced onion
1/2 cup minced celery
1 tablespoon horseradish
1/4 teaspoon black pepper to taste
Cook potatoes in plenty of boiling water. Drain and rinse lightly with cool water.
Meanwhile, combine the rest of the ingredients in a medium-sized mixing bowl. Add the potatoes, stir lightly and refrigerate until ready to use.
Amount of horseradish may be increased according to personal preference.
