English Muffin Pizza

Yield: Serves 2. Each serving: 2 pizza halves.

2 sour dough English muffins
1/4 cup pasta sauce
1/4 cup broccoli florets, cut in fine pieces
1/4 cup light shredded mozzarella cheese

Split the English muffins in half and place them cut side up on a toaster oven baking tray.

Use a spoon to put 1 tablespoon of pasta sauce on each muffin half.

Place 1 tablespoon of broccoli on each muffin half.

Top each muffin half with 1 tablespoon of shredded cheese.

Bake each muffin in the toaster oven until the cheese melts and the muffin is toasted, about 10-15 minutes. You can also bake them at 375 in the large oven. Serve hot.
