Fenugreek is an important ingredient of curry and is the same ingredient used in maple-flavored syrups. Curry adds a subtle sweet spice flavor to sweet potatoes and eliminates the need for adding butter or sugar to these nutritious tubers.
3/4 cup apple cider or apple juice
2 red yams or yellow sweet potatoes, peeled and sliced in thin discs
1/2 tsp apple pie spice (cinnamon, ginger, nutmeg, cloves)
1/2 tsp curry powder
Preheat oven to 350º.
Combine ingredients in a medium-sized bowl and place into covered glass baking dish. Bake for one hour or until tender. You can also cook this dish in the microwave- stop and stir while cooking and cook for 30-40 minutes or until tender.
