Crockpot Lentil Rice Soup

Yield: Serves 8. Each serving: 1 cup.



The slow cooker makes this soup while you work or run holiday errands.

2 cups dry lentils
2 cups uncooked brown rice
1 cup chopped carrots
1/2 cup chopped celery
1/2 onion, chopped
8 cups water
15 oz canned chicken broth
1 tsp garlic powder
black pepper to taste
1 tsp dried oregano
1 bay leaf
1 cup sliced mushrooms

Place the all ingredients except mushrooms in a slow cooker. Cover and cook on low setting for 7 to 8 hours or on high for 2-3 hours. Stir in the mushrooms 30 minutes before serving.
