Cranberry Bread Pudding

Yield: Serves 10. Each serving: 1 cup.



10 slices 100% whole wheat bread
1/2 cup chopped cranberries
10 ounces egg whites
3 cups non fat/skim milk
1/4 cup sugar
1/2 cup Splenda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla extract

Cut the bread slices into cubes and place in a glass baking dish. Combine the rest of the ingredients and pour over bread. Bake at 350 degrees for 45 minutes or until done. The bread pudding is done when it is firm in the center. Serve warm.
