4 large orange yams, peeled
1 green apple, peeled and diced
1 cup raw cranberries
1/2 cup raisins
2 tablespoons maple syrup
1/2 cup orange juice
1 teaspoon cinnamon
Pinch nutmeg
Cut peeled yams into 1/2 inch chunks and spread in a large baking dish. Top with diced apple, cranberries and raisins. Sprinkle with maple syrup and spices then pour orange juice over all.
Cover and bake at 350º for 1 hour or until yams are tender. Stir and serve hot.
