Corn Bean Relish

Yield: Serves 4. 1/2 cup per serving.

Ingredients

Instructions

1 cup cooked corn kernels
1/4 cup chopped red onion
1-1/2 cups cooked or canned black beans, drained
1 ripe tomato, chopped
1 bell pepper, chopped
2 tsp oil
2 Tbsp flavored vinegar
dash hot pepper sauce

Directions:
Mix all ingredients in medium-sized mixing bowl. Refrigerate until ready to serve. Serve as a side dish or condiment.
