1-1/2 cups couscous
2 cups water
1 teaspoon olive oil
1/2 teaspoon chopped lemon grass
1/2 teaspoon chopped fresh oregano or
1/4 teaspoon dried oregano
1 lemon, zest and juice
1/4 teaspoon black pepper to taste
1/4 cup chopped green onion
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
Combine couscous and water; cover and microwave for 5 minutes or until water evaporates and couscous is tender.
Toss with remainder of ingredients. Chill before serving.
