Cinnamon Pecan Muffins

Delicious nutty muffins.

  1. Combine pecans, cinnamon, and 1/4 cup Splenda and mix well
  2. Set aside for toppings
  3. Preheat oven to 325F
  4. Beat egg whites with cream of tartar until stiff but not dry
  5. Separately, beat egg yolks
  6. Add sour cream, extracts, and remaining sweetener and beat thoroughly
  7. Combine protein powder, baking powder, and salt and mix into the yolk mixture
  8. Stir until combined, and then gently fold in the egg whites
  9. Fill greased muffin tins halfway
  10. Top with nut mixture and bake in preheated oven for 50-60 minutes
