Chocolate Zucchini Snack Cake
A deliciously low-fat way to get your chocolate fix.
Yield: Serves 18
Ingredients
- 2 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 2 1/2 cups shredded, unpeeled zucchini
- 1 cup granulated sugar
- 1/4 cup baking cocoa
- 1 1/2 tsp. ground cinnamon
- 1/3 cup grapeseed oil
- 1/3 cup low-fat buttermilk
- 2 tsp. vanilla extract
- 1/2 tsp. butter extract
- 1/2 cup egg substitute or 3 large egg whites
- 1 1/2 tsp. powdered sugar
Instructions
- Preheat oven to 350 degrees F
- Coat a 13 x 9-inch baking pan with cooking spray
- Combine all of the remaining ingredients except the powdered sugar in a large bowl; mix well
- Spread in prepared pan and bake for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean
- Cool completely in pan on wire rack
- Dust with powdered sugar
