A lively rice dish that’s high in flavor, fiber and nutrients in this easy to make one pot meal.
1 cup white long grain rice
14-ounce can stewed diced tomatoes with Italian herbs
15-ounce can kidney beans, drained and rinsed
2 cups frozen corn kernels
1 cup prepared salsa
1-1/2 cups water
Place all ingredients together in large, shallow microwave dish.
Cover and microwave for 25-30 minutes or until rice is tender and has absorbed almost all liquid.
This recipe can be made on top of the stove in a dutch oven- cooking time may vary slightly.
