Yield: Serves 2
4 slices 100% whole wheat bread
2 teaspoons light mayonnaise
6 ounces cooked chicken breast, sliced thin
2 small plum tomatoes, sliced
4 cups shredded ready-to-serve romaine lettuce
1/2 cup sliced red onions
1/4 teaspoon black pepper
Toast bread and spread with mayonnaise. Make 2 sandwiches:
Place lettuce on toast and top with chicken, tomato, onion slices and pepper. Top with the other slice of bread and enjoy!
