Chicken Rice Salad Photo Yield: Serves 6. 2 cups per serving.

Ingredients

Instructions

8 cups romaine lettuce, ready to serve
3 cups cooked brown rice
3 cups cooked chicken breast, cubed
1 tomato, chopped
1/4 cucumber, sliced
2 teaspoons vegetable oil
4 tablespoons balsamic vinegar
1 teaspoon dried parsley
1/4th teaspoon black pepper

Toss all ingredients together in a large salad bowl.
