Chicken Rice Casserole

Yield: Serves 4. 1 cup per serving.

Instructions

2 cups cooked white chicken meat, skinless and cut into cubes
1 cup white rice
2 cups low-sodium chicken broth
1 cup frozen mixed vegetables
1 tsp Italian seasoning

Directions:
Place all ingredients in 2-qt microwaveable container. Cover and cook on medium power until rice is done, about 20-25 minutes. Stir occasionally. Serve hot.
