2 cups cherry tomatoes, washed and halved
8 cups ready-to-serve mixed greens
1 cup chopped cucumber
1 Tbsp olive oil
2 Tbsp red wine vinegar
freshly ground black pepper to taste
Place tomatoes, greens and cucumber in a bowl and toss together; chill until ready to serve. When you are ready to serve, add oil, vinegar and pepper and mix well.
