Carrot Cake with Black Walnut Frosting

Perfectly finishes the perfect dinner.

Yield: Serves 12





  1. Preheat oven to 350 degrees F
  2. Spray two 8- or 9-inch round pans (2 inches tall) with cooking spray and dust with flour
  3. Combine sugar, oil and eggs and beat for one minute
  4. Mix in vanilla
  5. Mix in all remaining ingredients except carrots and nuts
  6. Beat about one minute
  7. Fold in carrots and nuts
  8. Pour into pans and bake for 30 minutes
  9. Let cool before frosting

  1. Beat butter, cream cheese and extracts until smooth
  2. Add powdered sugar, 1/2 cup at a time and beat until frosting reaches a spreading consistency
  3. Frost between layers and on top of cake


  1. Add golden raisins or pineappl
  2. Substitute 2 cups shredded zucchini in place of the shredded carrots
