Burritos make a quick, tasty and very portable meal which can be eaten hot or cold. Fat-free refried beans are available in most markets. A growing number of markets also carry fat-free tortillas.
4 large fat free flour tortillas
1-1/2 cups fat free refried beans, heated
1 cup cooked brown rice
1 cup shredded romaine lettuce
1 tomato, diced
2 green onions, sliced
4 tsp salsa
Heat the tortillas4 until they are warm and soft. Spread about one third cup of the heated beans down the center of each tortilla, then top with rice, lettuce, tomato, onions and salsa. Add a slice or two of avocado if desired. Fold the bottom end toward the center, then roll the tortilla around the filling. Repeat with remaining tortillas.
