Brussels Sprouts with Apples and Onions

Yield: Serves 4 - 1 cup per serving.



1 pound steamed Brussels sprouts
1 cup sliced sweet onion
1 apple, sliced thin
1/4 cup apple juice
1 tablespoon light soy sauce
1 tablespoon rice vinegar

Lightly spray a large nonstick skillet with vegetable oil spray and place over medium-high heat. Saute onion and apple 3 minutes, add remaining ingredients, stir and heat through.

Serve hot.
