Brown Rice and Kale Pilaf

Yield: 4- 3/4 cup per serving



1/2 tsp sesame oil
1 cup dry brown rice
1 clove garlic, minced
2 cups water
1/4 teaspoon cumin
Pinch cayenne pepper
2 cups fresh kale, chopped
1-1/2 tablespoons lemon juice

Heat oil in a nonstick pan. Add rice and minced garlic and saute 2 minutes.

Add cumin, pepper and water and bring to a boil and then reduce heat to low and simmer 30 minutes.

Add the kale on top (do not stir) and continue cooking 10 minutes or until the rice has absorbed all the liquid. Add lemon juice, stir and serve. This dish goes well with baked chicken or fish.
