Broccoli Sesame Salad

Yield: Serves 4. Each serving: 1 cup.



This salad goes well with grilled fish, veggie burgers, stir-fry dishes and vegetarian chili. You can also use frozen broccoli thaw and drain well before tossing with the dressing.

4 cups broccoli florets
2 tsp canola oil
1 Tbsp flavored vinegar
1-1/2 tsp light soy sauce
1/4 cup sliced green onion
2 tsp sesame seeds, toasted

Place broccoli in small covered microwaveable container and cook on full power until crisp-tender, about 3 minutes. Rinse immediately with cool running water and drain well in colander. Place broccoli in medium-sized bowl and add the rest of the ingredients. Stir well and serve immediately or chill for later use.
