5 ounce baking potato
1/4 cup non-fat sour cream
1 cup steamed broccoli
2 tablespoons light shredded cheddar cheese
1/4 teaspoon black pepper
Wash potato under running water and pierce with a fork. Bake in the microwave until done, about 4 minutes.
Cut the potato in half lengthwise and fluff the inside with a fork. Place the sour cream and broccoli on the potato. Top with pepper and cheese.
Microwave on full power for 1-2 minutes or until heated through. Serve hot.
