Black Bean Relish

Yield: Serves 4. Each serving: 1/2 cup.

Instructions

This relish makes a great topping for chicken or fish.

1 cup cooked or canned black beans, rinsed and drained
1 orange, peeled & diced
2 Tbsp red onion, sliced
1/2 cup diced green pepper
2 Tbsp cider vinegar
1 tsp honey

Mix all ingredients together in medium-sized mixing bowl. Refrigerate until ready to serve.
