Yield: Serves 4. 1 each.
2 (10 inch) flour tortillas
1 teaspoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1 tablespoon minced garlic
1 teaspoon minced jalapeno peppers
15 ounce can pinto beans, rinsed and drained
2 tablespoon water
2 tablespoon chopped fresh cilantro
Place tortillas in microwave and heat for a few seconds to warm them.
Heat oil in a 10-inch skillet over medium heat. Saute onion, bell pepper, garlic and jalapenos until golden, about 3 minutes.
Add beans, water and chopped cilantro. Cook to heat through, about 2-3 minutes.
Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately. We recommend serving these burros with steamed veggies or a tossed salad.
