Barley Lentil Soup

A hearty vegetarian soup

Barley Lentil Soup Photo Yield: Yield 8 servings. 1-1/4 cups per serving.


Soup is a wonderful way to enjoy barley, a high-fiber grain. This soup is delicious for lunch or dinner.


  1. Spray a large pot generously with nonstick spray and heat over medium-high heat
  2. Add onion and garlic and sauté until golden, about 5 minutes
  3. Add remaining ingredients and bring to a boil over medium-high heat
  4. Reduce heat and simmer. until barley and lentils are tender, about 1 hour
  5. Spoon into soup bowls
