Banana Pudding

Yield: Serves 4. Each serving: 1/2 cup



12 ounces silken tofu, firm
2 bananas
1/3 cup skim or soy milk
1/3 cup Splenda
1/2 teaspoon vanilla extract

Place all ingredients in a food processor and blend on high speed until smooth. Pour into 4 individual dessert glasses and refrigerate until ready to serve.

Optional toppings: light whipped cream, fresh berries, ground cinnamon.
