Banana and Oat Muffins
This hearty breakfast recipe is a favorite at the Biggest Loser Resort.
Per Serving: 227 calories, 2 gram fat, 6 grams protein, 44 grams carbohydrates, 5 grams dietary fiber

Serves 6
Ingredients
1 large egg
¾ cup apple juice
1 cup raisins
1 cup chopped banana
½ cup applesauce
1 cup whole wheat flour
1 cup quick oats
1/3 cup fructose
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
Instructions
Preheat oven to 400 degrees F.
Mix dry and wet ingredients separately. Combine wet and dry ingredients and mix until incorporated.
Lightly spray muffin tins with Pam ® non-stick cooking spray. Fill muffin tins 2/3 of the way full.
Bake for 15-20 minutes. Let cool and serve.
