Baked Sweet Potato

Baked Sweet Potato Photo Yield: Serves 1. 1 cup per serving.



1 small sweet potato, washed and pierced with a fork
1/2 tablespoon light margarine (trans free)
1 tablespoon reduced-calorie pancake syrup

Bake the sweet potato in the microwave until it can be pierced easily with a fork, about 4-6 minutes per potato.

Place the sweet potato on a small plate. Cut in half lengthwise. Mash and fluff the inside with a fork.

Place the margarine and syrup in the center. Sprinkle with a little ground cinnamon. Serve hot.
