Baked Chimichangas

A lean recipe for a favorite Mexican dish.

  1. Preheat oven to 475 degrees F
  2. Spray a 9 x 13-inch baking dish with olive oil cooking spray
  3. In a large skillet sprayed with olive oil cooking spray, brown meat and onion
  4. Stir in garlic, 1/2 cup salsa, and chili seasoning
  5. Lower heat and simmer for 5 minutes
  6. Spoon 1/4 cup meat mixture into center of each tortilla
  7. Lightly spray tops with olive oil cooking spray
  8. Bake for 12 to 14 minutes or until golden brown
  9. For each serving, place a chimichanga on a serving plate, spoon 2 Tbs. salsa and 1 Tbs. sour cream over top
