Baked Beans and Franks

Yield: Serves 4. 1-1/2 cups per serving.



2 15-ounce cans great northern beans, drained
1/2 onion, medium diced
1/2 green pepper, medium diced
14.5 ounce can whole tomatoes, drained
2 tablespoons cider vinegar
1/4 cup water
1/3 cup molasses
2 lowfat turkey franks, sliced thin

Place all ingredients in a medium-sized sauce pan. Bring to a boil, reduce to a simmer. Stirring occassionally, cook for about 12-15 minutes, or until onions and beans are very tender and the sauce is thick. Serve with sweet-sour cole slaw.

Sweet-Sour Cole Slaw:
1 tablespoon nonfat sour cream
2 tablespoons nonfat mayonnaise
2 tablespoons sugar
3 tablespoons vinegar
1/8 teaspoon pinch celery seeds
4 cups packaged coleslaw mix
2 tablespoons finely chopped green onion

In a medium-sized mixing bowl, combine nonfat sour cream, nonfat mayonnaise, sugar, vinegar and celery seeds. Mix smooth with wire whisk. Add coleslaw mix and green onion. Toss together well and refrigerate until ready to serve.
