Bacon and Chicken Rolls
A meaty combination rolled together.

Serves 4
Ingredients
8 slices bacon, cooked and crumbled
1/4 cup Parmesan cheese
2 Tbs. fresh parsley
1/2 tsp. dried oregano
1 lb. boneless chicken
2 Tbs. olive oil
salt
2 c chicken broth
1/2 cup diced tomato
Instructions
Mix bacon, Parmesan cheese, and herbs
Flatten chicken and fill with half of the bacon mix
Roll up and secure with a toothpick
In skillet, heat oil
Add chicken and salt and cook until golden brown
Remove
Add broth and tomatoes and heat to boiling
Add remaining bacon mix
Reduce heat and simmer on low for 5 minutes
Return chicken roll, heat and serve
