Arborio rice, usually used for risotto, makes a creamy rice pudding.
1/2 cup medium-grain (arborio) rice
1/3 cup sugar
1 teaspoon cornstarch
2 cups nonfat milk
1/4 cup raisins
1 baking apple, peeled, cored and diced into 1 inch pieces
1/2 teaspoon apple pie spice
1 teaspoon vanilla extract
Combine rice, sugar, cornstarch and milk. Bring to a simmer and add raisins, apple pieces and apple pie spice. Reduce heat to low and stir frequently until pudding is thick and creamy about 20 minutes. Stir in vanilla, cover and allow to sit for 5 or 10 minutes.Stir and serve.
