Apple Carrot Salad
A delicious addition to any cookout.

Ingredients
4 large carrots, shredded
1 medium apple, chopped
1/3 cup raisins
1/2 cup plain Greek yogurt
2 tsp. Dijon mustard
2 tsp. lemon juice
1/8 tsp. pepper
1 tsp. honey
1/3 cup shredded reduced-fat cheddar cheese
Instructions
In bowl, combine the carrots, apple, and raisins
In a small bowl, combine yogurt, mustard, lemon juice, pepper and honey
Pour over carrot mixture and toss to coat
Stir in cheese
