Apple Almond Rice Pilaf

Apple Almond Rice Pilaf Photo Yield: Serves 16. Each serving: 1/2 cup.



1 teaspoon oil
1/3 cup sliced almonds
1 cup chopped red apples (donít peel)
2 cups water
1 cup brown rice
1/4 teaspoon cinnamon
1 tablespoon parsley flakes
1/2 tablespoon chicken bouillon granules

Heat oil in large nonstick skillet or Dutch Oven over medium-high heat. Swirl the almonds in the pan until nutty and add the oil and apples. Cook apples briefly then add the rest of the ingredients. Bring to a boil then cover pan and reduce to a simmer. Cook until rice is tender and liquid is absorbed, about 45 minutes.

Microwave instructions: toast the almonds in a toaster oven or regular oven. Place all ingredients in a large covered microwave container and cook on full power until liquid is absorbed & rice is tender, about 33-40 minutes.
