This fresh spring salad is very colorful with black beans, red leaf lettuce, radishes and more. It is a delicious way to eat more vegetables.
6 cups red leaf lettuce
1/4 cup nonfat Italian salad dressing
1 cup 3 inch celery sticks
1/2 cup sliced radishes
15- ounce can black beans, rinsed and drained
1 cup frozen artichoke hearts, thawed
4 tablespoons grated parmesan cheese
Toss red leaf lettuce in medium-sized bowl with dressing. Divide among 4 dinner sized plates. Arrange celery sticks, radishes, black beans and artichoke hearts in decorative manner over the top of the tossed lettuce. Sprinkle the top of each serving with parmesan cheese. Optional serving suggestion: serve with crusty sour dough bread.
