2 Bean Salad

Yield: Serves 4. 1/4 cup per serving.



This colorful bean salad will enhance any meal.
1 15 ounce can black beans, drained and rinsed
1 cup frozen French style green beans, thawed
1 tomato, diced
1 bell pepper, diced
1 Tablespoon olive oil
2 Tablespoon red wine vinegar
1 teaspoon Italian seasoning
1 Tablespoon Parmesan cheese
6 cups tossed dark green lettuce, washed and ready to serve

Place all ingredients, except lettuce, in a medium sized mixing bowl and stir together. Chill bean salad until ready to serve.

To serve, divide lettuce among 4 large salad plates then spoon bean salad over the top. We recommend using 2 ounce portions for tasting samples per person.
