Pizza Roasted Pumpkin Seeds

Now there is a way to enjoy the seeds of a pumpkin - either while you are carving one or buying the seeds from your grocery store. Pumpkin seeds are a good source of iron and zinc.
2 cups pumpkin seeds
1/2 tsp vegetable oil
1 tsp dried oregano
1/2 tsp paprika
1/10 teaspoon pinch cayenne pepper
1/2 tsp garlic powder
1 Tbsp parmesan cheese
Preheat oven to 350 degrees.
Spread the pumpkin seeds out on a large baking sheet in a single layer. Roast the seeds until lightly golden, about 30-40 minutes.
Remove them from the oven and allow to cool briefly and toss with the oil.
Meanwhile, place the seasonings and cheese into a large mixing bowl. Add the roasted seeds and mix well. Allow to cool completely then store in covered container for up to one week.
