Pecan Cookies
Low-carb pecan cookies
Yield: Serves 4
Ingredients
- 2 egg whites
- 2 cups crushed pecans
- 1 Tbs. cinnamon
- 1/3 cup Splenda
- 1 tsp. vanilla extract
Instructions
- Preheat oven to 350F
- Whip egg whites until frothy
- Add remaining ingredients
- Roll into balls, drop on grease cookie sheet
- Cook for 15 minutes at 350F

This cookie is okay, The cinnamon is over powering will not use as much next time and they need to be spread very thin on the cookie sheet because they cook up really big.
