Peach Souffle
Peach souffle that only takes a few minutes.
Yield: Serves 4
Ingredients
- 2 peaches
- 1/2 cup Splenda
- 1/2 tsp. lemon juice
- 1/4 tsp. salt
- 4 egg whites
Instructions
- Heat oven to 350F
- Spray 4 individual souffle dishes (1 cup capacity)
- Peel peach and cut into thin slices
- Sprinkle with 1 Tbs. of sugar substitute and the lemon juice
- Beat egg whites with salt until they hold soft peaks
- Gradually beat in the remaining sugar and continue beating until the whites hold stiff peaks
- Gently fold in peach slices
- Divide among dishes and smooth tops
- Bake until puffed and browned, about 18 minutes
- Serve immediately
