Parmesan Pork Tenderloin

Well seasoned lean pork makes a satisfying meal.

Yield: Serves 4


  • 1 lb. pork tenderloin
  • 3 Tbs. seasoned bread crumbs
  • 1 Tbs. grated Parmesan cheese
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • Cooking oil spray
  • 1 small onion, chopped
  • 1 clove garlic, minced



  1. Cut tenderloin crosswise into 8 slices, approximately 1-inch thick
  2. Place each slice on its cut surface and flatten with heel of hand to 1/2 inch thickness
  3. Combine crumbs , parmesan cheese, salt and pepper
  4. Dredge pork slices to coat
  5. Heat large nonstick skillet coated with cooking spray over medium heat
  6. Add pork, onion, and garlic and sautee 8 to 10 minutes, turning pork once and stirring vegetables occasionally
