Overnight Diabetic Date Bars

A little bit of planning for a whole lot of flavor!

Yield: Makes 12 bars

Ingredients

  • 1 cup chopped dates
  • 1 1/2 cups applesauce (unsweetened)
  • 3 to 4 packets of sugar substitute
  • 1 tsp. vanilla
  • 2 medium eggs
  • 1/2 c. margarine, melted
  • 2 c. flour
  • 2 tsp. soda
  • 1/4 tsp. cloves
  • 1/2 tsp. cinnamon

Instructions

  1. Night before, combine first three ingredients
  2. Let chill in refridgerator overnight
  3. The next day, mix dry ingredients
  4. Add beaten eggs, margarine and vanilla
  5. Add date mixture last
  6. Pour into 9"x13" pan
  7. Sprinkle with 1/2 cup chopped pecans
  8. Bake at 350 degrees for 30 minutes
  9. Let cool completely and cut into bars.  Makes a great energy bar or healthy snack mid-afternoon when energy tends to slump
  10. For added health benefit, use whole grain flour or substitute one cup of flour for one cup of steel cut oats
