1/2 cup fat free buttermilk
1 pound chicken breast halves (about 4)
1/2 cup corn flake crumbs
1 cup bread crumbs
1 tablespoon granulated garlic
1 teaspoon ground black pepper
1 teaspoon all purpose flour
1 teaspoon paprika
pinch cayenne pepper
vegetable oil cooking spray
Preheat oven to 450° F.
Combine ingredients for breading in a shallow pan or medium-sized mixing bowl.
Rinse chicken breasts in cold running water, remove skin and excess fat and pat dry.
Dip the meat side of the chicken into buttermilk, then dip into the breading mixture. Press down firmly so the breading sticks to the chicken.
Place the chicken breaded side up on a lightly oiled pan; spray the top of the chicken well with vegetable oil cooking spray. Bake the chicken until done, about 30 minutes.
