1/2 cup fat free buttermilk
1 pound catfish fillets (about 4 fillets)
1/2 cup corn flake crumbs
1 cup bread crumbs
1 tablespoon garlic powder
1 teaspoon ground black pepper
1 teaspoon all purpose seasoning
1 teaspoon paprika
pinch cayenne pepper
vegetable oil cooking spray
Preheat oven to 450° F.
Combine ingredients for breading in a shallow pan or medium-sized mixing bowl.
Rinse catfish fillets in cold running water and pat dry.
Dip the fillet into buttermilk, then dip into the breading mixture. Press down firmly so the breading sticks to the catfish.
Place the breaded side up on a lightly oiled pan; spray the top of the fish well with vegetable oil cooking spray. Bake about 20 minutes.
