Oven Beef Stew

Slow cooked means extra tender...

Yield: Serves 5 (1/2 cup per serving)


  • 2 lbs. beef stew meat, lean
  • 2 med. onions, chopped
  • 1 c. cut celery
  • 2 c. (or more) sliced carrots
  • 3 or 4 med. potatoes, cut into chunks
  • 2 heaping TBS tapioca flour (cassava root)
  • 1 TBS sugar
  • 1 TBS salt
  • About 2 c. tomato juice


  1. Put in large casserole or roaster with tight cover
  2. Sprinkle with chopped parsley, cover and bake at 250 degrees for 5 to 7 hours
  3. May omit salt for salt free diet
  4. May also substitute cubed pork with equivalent success
