1/2 cup raisins
4 tablespoons orange juice
1 cup boiling water
3/4 cup brown sugar
Spice cake:
2 cups all purpose flour
1/2 cup oatmeal
1 cup sugar
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/2 tsp salt
2 tsp baking powder
1/4 cup egg white
2 tablespoons apple sauce
1 cup skim milk
Preheat oven to 350º. Lightly spray a nonstick 9 by 13 baking dish and sprinkle with raisins.
Mix dry ingredients for cake together in large mixing bowl; add wet ingredients and mix smooth.
Pour batter on raisins and sprinkle with brown sugar. Mix boiling water and orange juice and pour over all. Bake until toothpick comes out clean, about 35-40 minutes. Cut in 15 squares and serve warm.
