Old Fashioned Cole Slaw

Bring this low-carb favorite along to your next cookout

Ingredients

  • 2/3 cup vinegar
  • ½ cup whipping cream
  • 2 large eggs, lightly beaten
  • 1/2 cup Splenda
  • Pinch of salt
  • 1 1/2 Tbs. butter, cut in pieces
  • 2 lb. cabbage, shredded

Instructions

  1. Combine first 5 ingredients in a small, heavy saucepan
  2. Cook over low heat, stirring constantly with a wire whisk, until thickened, about 8 minutes
  3. Remove from heat
  4. Add butter, stirring until it melts
  5. Place chopped cabbage in separate bowl
  6. Pour mixture over cabbage
  7. Toss gently to coat
  8. Cover and chill
