Old Fashioned Cole Slaw
Bring this low-carb favorite along to your next cookout
Yield: Serves 8
Ingredients
- 2/3 cup vinegar
- ½ cup whipping cream
- 2 large eggs, lightly beaten
- 1/2 cup Splenda
- Pinch of salt
- 1 1/2 Tbs. butter, cut in pieces
- 2 lb. cabbage, shredded
Instructions
- Combine first 5 ingredients in a small, heavy saucepan
- Cook over low heat, stirring constantly with a wire whisk, until thickened, about 8 minutes
- Remove from heat
- Add butter, stirring until it melts
- Place chopped cabbage in separate bowl
- Pour mixture over cabbage
- Toss gently to coat
- Cover and chill
