Oat Bran Muffins

A delicious and healthy way to get adequate fiber!

1 serving = 1 muffin. 45 g. chol; 3 g. pro; 5 g. fat; 114 cal; 2.6 g. fiber; 188 mg. sodium; 46 mg. chol.
Yield: Makes 12 muffins

Ingredients

  • 2 1/4 c. oatbran cereal, uncooked
  • 1/4 c. chopped nuts
  • 1/4 c. raisins
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. milk
  • 1/3 c. honey
  • 2 eggs, beaten
  • 2 TBS vegetable oil

Instructions

  1. Preheat oven to 425 degrees
  2. Spray 12 medium sized muffin tins with non-stick spray or line with paper baking cups
  3. In large bowl, combine oat bran cereal, nuts, raisins, baking powder and salt
  4. Add remaining ingredients; mix just until all dry ingredients are moistened
  5. Fill prepared muffin cups almost full
  6. Bake 15-17 minutes, or until golden brown
  7. Serve warm with sugar free jam
