Nacho Skillet Dinner

This easy dinner uses ground lean turkey breast, kidney beans, corn and baked tortillas topped with cheese.
12 ounces ground turkey breast
1-15-1/4 ounce can kidney beans, rinsed and drained
2-8 ounce cans no-salt-added tomato sauce
1 cup frozen corn kernels
1 tsp each: garlic powder, chile powder
2 cups baked tortilla chips, crushed
1 cup nonfat grated mozzarella cheese
Spray a large 12 inch nonstick skillet with vegetable oil cooking spray and heat over medium high heat. Cook turkey until no longer pink. Add beans, tomato sauce, corn and seasonings. Bring to a boil, reduce to a simmer and cook 5 minutes. Sprinkle chips followed by cheese evenly over top, cover and turn off stove. Allow to sit for 2-3 minutes or until cheese melts.
