Moroccan Chicken Stew

Chicken stew with a Moroccan flair.

Yield: Serves 4


  • 4 skinless boneless chicken breasts
  • 2 tsp. ground cumin
  • 2 tsp. ginger
  • 1/8 tsp. cayenne pepper
  • 2 1/2 cups chicken broth
  • 1/2 cup shredded zucchini
  • salt and black pepper
  • 2 Tbs. chopped fresh cilantro


  1. Cut chicken into bite-sized pieces
  2. Heat a nonstick saucepan
  3. Add oil to pan
  4. Saute chicken
  5. Add the cumin, ginger, and cayenne
  6. Cook, stirring
  7. Add broth, stir and bring just to a boil
  8. Reduce heat, cover and simmer
  9. Add zucchini to the stew
  10. Bring to a boil; reduce heat to simmer uncovered
  11. Stir in cilantro
  12. Heat through and serve
