Mock French Toast
French toast without the bulky bread.
Yield: Serves 6
Ingredients
- 6 oz. unflavored pork rinds
- 4 eggs
- 1/2 cup heavy cream
- 6 packets artificial sweetener
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
Instructions
- Crumble pork rinds up until they resemble bread crumbs and set aside
- Beat eggs
- Add remaining ingredients and mix well
- Add crushed pork rinds to the egg mixture and allow to sit for approximately 5 minutes
- Meanwhile, heat butter or oil in a skillet
- Pour onto skillet 1/8 cup at a time
- Heat, turning once
- Serve with blackberry syrup, maple butter or low carb maple syrup
