Mock French Toast

French toast without the bulky bread.

Nutrition Facts: Carbohydrates 1.6g
Yield: Serves 6

Ingredients

  • 6 oz. unflavored pork rinds
  • 4 eggs
  • 1/2 cup heavy cream
  • 6 packets artificial sweetener
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract

Instructions

  1. Crumble pork rinds up until they resemble bread crumbs and set aside
  2. Beat eggs
  3. Add remaining ingredients and mix well
  4. Add crushed pork rinds to the egg mixture and allow to sit for approximately 5 minutes
  5. Meanwhile, heat butter or oil in a skillet
  6. Pour onto skillet 1/8 cup at a time
  7. Heat, turning once
  8. Serve with blackberry syrup, maple butter or low carb maple syrup
