Mint Ice Cream
A cool minty ice cream treat.
Yield: Serves 6
Ingredients
- 4 egg yolks
- 3 cups heavy cream
- 1 tsp. mint extract
- 2/3 cup Splenda
- Ice cream maker
Instructions
- Combine half of the cream and mint extract in a saucepan
- Bring to simmer
- Remove from heat and let stand for 30 minutes
- Mix in remaining cream
- Beat the egg yolks and Splenda until pale yellow
- Gradually beat in the cream mixture
- Return mixture to saucepan and stir over medium heat until it thickens
- Do not let the mixture boil
- Chill
- Once the mixture is cold, pour it into ice cream machine and freeze according to
manufacturer's directions.
